H&M Kitchen: Crockpot Chicken Cacciatore

Happy Saturday all! Today we're sharing one of our recent favorite recipe finds. This recipe is another Crockpot recipe and it's amazingly delicious. It's super simple to throw together and it's always great for family get-to-togethers or just a special meal time treat. Here's the recipe -

Crockpot Chicken Cacciatore

Ingredients

4 chicken thighs, trimmed

Salt & pepper, to taste

1 {28 oz} can Italian style crushed tomatoes

1/2 green pepper, sliced

1/2 red pepper, sliced

1/2 onion, sliced

2 tbl. Italian seasoning

1 bay leaf

1/2 cup?Mozzarella?cheese, shredded

1/2 cup?Parmesan?cheese, shredded

1 box?spaghetti?noodles

Directions

Trim the excess fat off the chicken thighs. Sprinkle them with salt and pepper and place in the bottom of your Crockpot. Place the peppers and onions on top of the chicken and pour the crushed tomatoes over top. Add the Italian seasoning and bay leaf. Stir slightly. Cook on low heat for 8 hours or on high heat for 4 hours. When cooking is complete, remove the bay leaf and chicken bones from the Crockpot, shred and large chicken?pieces. Serve over noodles and top with Mozzarella and Parmesan cheese.
